Saint Joseph Pastries

St. Joseph's feast day of March 19th was first chosen by the Roman Catholic Church in 1479. The Liberalia was a celebration of two Roman gods - Bacchus, god of wine, and Silenus, god of wheat. To honor the gods in their celebrations, revelers would drink copious amounts of wine and cook wheat pancakes or fritters.

Remove from oven, carefully cut a small slit horizontally into the side of each puff, place on a rack to cool. When completely cooled, carefully slice each puff in half horizontally (forming a top and a bottom).
