One of our favorite restaurant treats from a local chain is their onion straws. If you're from our hometown, it's the ONLY appetizer you order when you go there and order and when my extended family from out of town comes to visit, this is the first dish they request as soon as they arrive at the airport.

Add the sliced onions to a bowl and cover with the buttermilk. Let soak for 15-20 minutes at least. Heat your oil. In a separate bowl, combine the rest of the ingredients. Add buttermilk and rest in the fridge for one hour. Add flour, onion powder, garlic powder, paprika, cayenne pepper and chili powder into the plate and mix well to combine. In a medium bowl, combine flour, salt, and pepper; mix well. In a large skillet, heat oil over medium-high heat. Place onion rings in flour, coat well, then carefully place in hot oil. Fry onions 6 to 8 minutes, or until golden. Drain on a paper towel-lined plate, and serve immediately.
