For the chocolate cupcakes: Preheat your oven - 180 C / 160 C fan / 350 F / gas mark 4 - and line a 12-hole muffin or cupcake tin with paper or silicone cases. Whisk ¾ cup (144g) vegan shortening and ¾ cup (132g) vegan butter for 1 minute using a stand mixer or a handheld electric mixer. Add 2 teaspoons (8g) vanilla extract, and mix for another minute.
