The Chinese leaf mustard 'Red Giant' is a rewarding plant for the vegetable patch. After a few weeks the spicy tasting leaves, called mustard greens, can be harvested and eaten fresh or cooked in the wok. For a longer harvesting period, new flowers should be removed right from the start.

I tried growing Chinese Giant Leaf mustard in our cool months (40 to 60 F). Plants grew quickly to about 3 inches, then the central stems started growing faster, and plants appeared to be bolting. Cabbage worms ate the plants down before they could actually bolt. I tasted a few leaves; flavor was hot, and lacking umame.

In the second year, the plant flowers and can grow 2 to 4 feet in height. Leaves are heart-shaped and coarsely toothed. Blooms from April to May with flowers occurring in a cluster at the end of the stem. Flowers are white with 4 petals in the shape of a cross. Fruits are slender capsules that contain a row of shiny black seeds when mature.

Chinese mustard grows fast, and recommended varieties such as 'South Giant Curled', and 'Florida Broad Leaf' usually reach harvest maturity 45 to 50 days after planting (Cornell 2006). This crop can be harvested by either cutting the entire plant or picking off the fully expanded leaves (Anderson 2011, MSU Extension 2020, UIUC Extension 2020).

Cultivation. Sow seed outdoors in deep, fertile but firm, soil that isn't too acidic. If space is limited, start the seeds in modules or seedtrays and plant outside when big enough to handle easily (about 5 or 6 leaves). Watering through the summer months is very important. Now add the mustard greens, turning the heat up to the highest setting. Add the sugar, sesame oil, and salt (and organic chicken bouillon if using). Stir and mix everything well. Cover the lid, and let it cook for about 45 seconds to a minute. Now uncover, stirring the greens one more time.
